Ingredients
Expedition Sauce
- 150 g Black Cherry Acapulco Gold (BCAG), about half a bottle
- 200 g mayonnaise
- 50 g prepared horseradish
- 100 g brown sugar
- 10 g smoked sea salt
- 5 g garlic powder
- 10 g onion powder
- 10 g apple cider vinegar
Instructions
Build the Base
- In a medium mixing bowl, combine the Black Cherry Acapulco Gold, mayonnaise, and prepared horseradish.
- Stir until the mixture is smooth and evenly combined.
Add the Seasonings
- Add the brown sugar, smoked sea salt, garlic powder, onion powder, and apple cider vinegar.
- Mix thoroughly until all ingredients are evenly distributed.
Incorporate the Brown Sugar
- Continue whisking until the brown sugar is fully dissolved.
- If necessary, break apart any clumps before mixing.
- For the smoothest texture, the brown sugar may be dissolved in a small amount of warm liquid before being added.
Adjust and Finish
- Taste and adjust seasoning if desired.
- The final tested version uses 10 g onion powder and 10 g smoked sea salt for a fuller savory profile.
- Stir until completely homogeneous.
Chill and Rest
- Refrigerate for at least 30 minutes before serving.
- This resting period allows the flavors to meld and the horseradish to integrate with the sauce.
