Slow-Cooked Beef Tacos

Three slow-cooked beef tacos with guacamole and cheese.

Slow-cooked beef simmered in a rich Black Cherry Acapulco Gold braising liquid, then crisped on a hot skillet and tucked into warm tortillas with creamy avocado, fresh cabbage, and salty cheese. Bold, comforting, and built for deep flavor with minimal effort.

INGREDIENTS

For the Beef

  • 2½–3 lbs beef chuck roast or bottom round roast, trimmed of excess fat
  • 1½ cups beef stock
  • ¾ cup Black Cherry Acapulco Gold Sauce (BCAG)
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • ½ large onion, sliced
  • 4 garlic cloves, smashed
  • 1 tsp salt, adjusted to taste
  • ½ tsp black pepper
  • 2 bay leaves

For Serving

  • Low-carb tortillas or lettuce wraps
  • Guacamole or mashed avocado
  • Crumbled cotija or feta cheese
  • Shredded cabbage or greens
  • Thinly sliced scallions

PREPARATION

Prepare the Beef and Braising Liquid

In a bowl, whisk together:

  • Beef stock
  • Black Cherry Acapulco Gold Sauce
  • Apple cider vinegar
  • Soy sauce

Add sliced onion, garlic, salt, pepper, and bay leaves to the bottom of the slow cooker.

Place beef roast on top.

Pour sauce mixture over the beef.


Slow Cook the Beef

Cover and cook:

  • LOW for 8–10 hours
  • or HIGH for 4–5 hours

Cook until beef is tender enough to shred easily with a fork.

Remove beef from the slow cooker.

Discard bay leaves.


Reduce the Juices (Optional)

Skim excess fat from the surface of the cooking liquid.

For a thicker sauce, transfer liquid to a saucepan and simmer over medium heat until slightly reduced.


Shred and Crisp the Beef

Shred cooked beef using two forks.

Heat a skillet or griddle over medium-high heat.

Add shredded beef in batches if necessary.

Ladle in a small amount of reserved cooking liquid.

Cook for 3–5 minutes, stirring occasionally, until edges become crisp and lightly caramelized.


ASSEMBLY

Warm low-carb tortillas or prepare lettuce wraps.

Fill with crisped shredded beef.

Top with:

  • Guacamole or mashed avocado
  • Cotija or feta cheese
  • Shredded cabbage or greens
  • Sliced scallions

Optional: drizzle with additional Black Cherry Acapulco Gold Sauce before serving.


SERVE

Serve immediately while the beef is hot and caramelized.
