INGREDIENTS
Pizza Base
- 1 premade pizza dough ball, room temperature
- Black Cherry Acapulco Gold Sauce, for spreading
Toppings
- 2 chorizo sausage links
- Nopales (cactus), diced
- Yellow or white onion, diced
- Garlic, minced
- Corn kernels (fresh, frozen, or canned and drained)
- Mozzarella cheese, shredded
- Cotija cheese, crumbled
- Olive oil, for finishing
- Fresh cilantro, chopped
PREPARATION
Prepare the Chorizo
Slice open the chorizo sausages and remove the casings.
Cook chorizo in a skillet over medium heat, breaking it apart into crumbles.
Cook until fully browned and lightly crisped.
Remove chorizo from the skillet and set aside, leaving rendered fat in the pan.
Cook the Vegetables
In the same skillet, add diced nopales, onion, and garlic.
Cook over medium heat for 5–7 minutes until onions are soft and fragrant and nopales are tender.
Add corn during the final minute of cooking.
Remove from heat.
Assemble the Pizza
Stretch pizza dough into the desired shape on a lightly floured surface.
Spread an even layer of Black Cherry Acapulco Gold Sauce directly onto the dough as the pizza sauce.
Sprinkle mozzarella cheese evenly across the surface.
Distribute cooked chorizo, nopales mixture, onion, garlic, and corn evenly over the pizza.
Finish with crumbled cotija cheese.
COOKING INSTRUCTIONS
Pizza Oven Method
Preheat pizza oven to 650°F.
Transfer pizza to the oven and cook for approximately 2 minutes, rotating as needed.
Cook until crust is blistered and fully cooked and cheese is melted.
Conventional Oven Method
Preheat oven to 500°F or the highest setting available.
If using a pizza stone or steel, preheat for at least 30 minutes.
Transfer pizza onto the stone, steel, or a preheated baking sheet.
Bake for 7–10 minutes until crust is golden brown and cheese is bubbling.
FINISH AND SERVE
Remove pizza from the oven.
Lightly drizzle with olive oil.
Top with freshly chopped cilantro.
Slice and serve immediately.
